Here's my research solution for freezing peaches with the least amount of damage after thawing.
Cut and peel 2 lb of peaches sliced ½” thick. Place in large zip lock bag with 8 oz sugar & a half teaspoon of crushed vitamin C. Mix to combine. On a metal pan, put down 2 paper towels & evenly spread out peaces, then cover with two paper towels. Place metal sheet on dry ice and then cover the paper towel with dry ice. Break up dry ice in big chunks. Place in camping type cooler. After 3 to 4 hours – or until frozen – remove frozen peaches. Vacuum pack in one pound increments. Immediately freeze in your regular freezer for storage. Vacuuming will not crush your hard & frozen peaches. Thaw in fridge until ready to use.

I received a FoodSaver as a wedding gift and use it all the time. I use the bags, which are reuseable. I often bake a 10-12 chicken breasts at a time, let them cool, vacuum seal and freeze them. Then, when I'm making dinner all I have to do is toss the bag into a pot of boiling water for 8-10 minutes! I do this with veggies too. Saves me loads of time and money. While buying one new isn't practical for those on a tight budget (some models cost upwards of $200), you can find them on Amazon for less. Otherwise, Christmas is just around the corner!
